My first of what I hope to be a weekly food blog :) I made this last week and it was GOOD! Perfect for the cold and rainy weather, hearty and fulfilling yet very healthy!
Directions
In a large pot (I used my Dutch Oven) heat 2 Tablespoons of Olive Oil, then add a head of chopped garlic and a chopped large onion.
Add 1 pound of bulk Italian Sausage and cook until almost brown.
Add 2 stalks (with leaves) of chopped celery and cook for about 3 minutes.
Add 4 chopped red potatoes + 1 14oz can of diced tomatoes, a quart of low sodium chicken or turkey stock, 2-3 bay leaves, and about a teaspoon of salt and pepper.
Bring to a boil, reduce heat and simmer for 20 minutes.
Add 1 pound of shrimp (peeled & deveined), 2 cups of roughly chopped spinach, 1/4 cup of chopped Italian parsley, and a dash or two of red pepper (depending on your spice preference).
Simmer for 30 minutes.
Serve with grated Parmesan cheese.

1 can 14.5 oz diced tomatoes

Bay leaf
Head of Garlic
Baby Spinach
Sea Salt, pepper, crushed red pepper
Parmesan Cheese (if you choose to add this get a block of the 'good' kind)
I Doubled this recipe up and used the second pound of sausage with links so it had more chunks in it. Vacuum seal half and return to it later :)
